【摘要】在最适合固定化德氏乳杆菌发酵的温度45°C ,PH7.2值以及葡萄糖浓度10%培养基的条件下对固定化德氏乳杆菌发酵乳酸与游离的德氏乳杆菌发酵乳酸能力进行比较。结果表明:德氏乳杆菌细胞固定化后与游离德氏乳杆菌细胞相比,在乳酸转换率,产酸量,热稳定性方面,固定化德氏乳杆菌细胞存在很大的优势。在最佳条件下固定化德氏乳杆菌的乳酸发酵可以达到转化率72%,发酵周期48h,而游离德氏乳杆菌只可以达转换率46%,发酵周期72h。

固定化技术是七十年代发展起来的新技术,与游离细胞发酵相比,在固定化酵母产乳酸发酵上具有发酵周期短,产酸能力强,容易提取等优点。固定化技术具有较好的催化活性和多种优点而被应用在制药行业,食品工业,环境保护及传统发酵工业中,尤其是固定化细胞酒精发酵上具有很大的用途。固定化细胞在工业的各个方面有显示出广阔的应用前景,但并非一切都能够应用固定化细胞来代替,因此选用时必须考虑是否经济适用,要考虑用于固定化的载体及试剂成本等[1] [2]。而要衡量是否值得将固定化技术用于德氏乳杆菌产乳酸的发酵就要对传统的德氏乳杆菌产乳酸能力与固定化德氏乳杆菌产乳酸能力,乳酸含量及发酵率等方面进行比较,并用生物统计学作为分析数据的手段,对数据进行有效分析。 copyright paper51.com
